Two Chicken Dinner Recipes That Won’t Break the Bank

Cooking instructor and founder of A Taste of Paris Lori Fangio shows us how to make chicken and vegetable casseroles and flavorful chicken pasta.

Chicken with red pasta sauce

    Heat olive oil in a large skillet or skillet over medium heat. Salt and pepper the chicken and add to the pan. Fry the chicken for 3-4 minutes on each side. Deglaze the skillet with chicken broth or white wine. Add the artichokes, pepperoncini, red pepper flakes and sauce to the pan and cook for about 10-12 minutes. Add the heavy cream and parmesan cheese to the sauce and stir to combine. Add the cooked pasta to the sauce, stir and serve.

    Chicken and vegetable casserole

      Preheat oven to 350 degrees. Melt butter in a heavy bottomed saucepan over medium heat, add flour and cook for 2 minutes. Heat the milk and broth in the microwave for 1 minute. Pour the heated liquid into the flour mixture and add the seasonings. Cook for 3-5 minutes until the sauce thickens. Meanwhile, boil the cauliflower and broccoli until soft. Grease a 9×13 baking dish with non-stick cooking spray. Add the vegetables, rice and chicken to the skillet, pour over the sauce and mix well, then arrange in the skillet. Sprinkle cheese on top and bake until cheese is melted, about 10 to 12 minutes.
