Papi’s Pies celebrates 6 years in Round Rock

Everyone is invited to the 6th Anniversary Party on Wednesday, February 15, 2023.

Papi’s Pies invites the public to its sixth anniversary party at its restaurant at 10 Chisholm Trail Road in Round Rock, Texas.

In 2017, Papi’s Pies held a ribbon cutting ceremony at their family restaurant. Since then, a lot has happened at this local business and community venue, thanks to the support of the community!

Papi’s Pies remains the only restaurant in Texas (as well as the south and southwest) to serve Bolivian saltene on its daily menu. The owners, José Parra and Julio Palacios, along with their son Julio-Eduardo Palacio, have been hard at work developing their restaurant business for six years – the menu has expanded significantly, as has their garden, patio and art! The restaurant’s menu offers dishes, desserts and appetizers from what he calls his “traditional cuisine”, which means recipes from childhood memories, adulthood on three continents, and recipes they enjoyed while raising their children and grandchildren.

A few highlights on this six-year culinary journey from a cottage garden restaurant:

  • Tens of thousands of saltenas have been eaten by Texans, as papi pies are the origin of this Bolivian national dish in the southwest. Some come from San Antonio, Tyler, and all N/S/E/W to eat this special item.
  • Since its inception, the restaurant has hosted monthly art exhibitions featuring local artists on the walls of the restaurant, as well as monthly free community parties.
  • The art has expanded outside the restaurant – with birdhouses made by local artists throughout the garden and two patio murals that were created by local artists after the patio expansion.
  • Julio’s co-owner, a professional theater director, once took time off to direct a bilingual play at the Austin Scottish Rite Theatre.
  • Their five grandchildren have grown a lot in those six years, including one in college and the other a high school student (who is now taller than his grandparents).
  • Based on customer feedback, the menu has expanded to include gluten-free, vegetarian, vegan and keto options, as well as a wider range of international dishes, including huitlacoche pancakes, basque grilled cheesecake, mollet, ruben tartine and passionfruit pie.
  • The restaurant has added a curated list of wines, beers and of course mimosa champagne at brunch.
  • The restaurant survived the pandemic thanks to the loyal support of Papi’s Pies friends and family.

Papi’s Pies have won awards/awards including:

  • Multiple winner of “Best Pie in Texas” from “Eat This, Not That” for cherry pie.
  • Featured on the TV program KVUE Foodie Friday with Brian Mays.
  • “13 Pies to Eat in Austin” by Eater Austin

NOTE ARTIST: In addition to celebrating our anniversary, we will also be celebrating a new art exhibition at the restaurant featuring cyanotypes and poetry by local artist Amy Jasek and her daughter Louise.
