Kettner Exchange Owner to Run La Valencia Hotel’s Hospitality Operations

La Jolla’s historic La Valencia Hotel will soon see new culinary and drink offerings thanks to the expertise of Matt Spencer’s SDCM restaurant group. Spencer, who is responsible for popular hotspots including Kettner Exchange, Devil’s Dozen Donuts, and Firehouse, has signed on to take over hospitality operations at La Valencia. This means SDCM will oversee all the onsite restaurants, including the Mediterranean Room and La Sala Lounge, as well as in-room and poolside dining options.

SDCM’s Corporate Executive Chef Brian Redzikowski is expected to lead the redevelopment of menus for La Valencia’s many dining options. Customers can expect a complete refresh of offerings with more exciting options to choose from. SDCM’s resident mixologist Eric Johnson will be tasked with updating the bar and cocktail offerings. With his expertise, customers will enjoy inventive drink options with their meals.

The redevelopment of The Pink Lady of La Jolla’s much-loved nautical-themed cocktail lounge, The Whaling Bar, has been eagerly anticipated. Delays have pushed back its reopening, but SDCM will finally oversee its reopening later this year. The revamped lounging area is sure to be a hit with both guests and residents alike.

The La Valencia Hotel resonates with history, as it was established on December 15, 1926 by La Jollans MacArthur Gorton and Roy B. Wiltsie. Since then, it has undergone several transformations. The Cabrillo Hotel adjacent to La Valencia was acquired in 1956 and incorporated as the West Wing, while Cafe La Rue and The Whaling Bar were constructed during the same period. La Valencia now features 114 completely renovated guest rooms and villas, all of which overlook Ellen Browning Scripps Park and offer stunning views of the Pacific Ocean.
